The 2008 sugaring season is off to a great start.

Well, now that the tapping is complete and the sap is running. Let me explain.

David, John, Neil, and Paul tapped out last week while the guys were on vacation from high school. Our friend Rob Potter and his son Tyler, and David’s cousin Dennis and his son Michael brought their drills along and helped out. It was rough going. The many snow and ice storms that we have experienced during this long winter weighed down a lot of sap line and buried it up pretty good. They worked very hard digging, breaking, and pulling line out of the glacier-like snow pack. All of them mentioned how soar their hands were after the long days in the woods.

But they got it done and two days ago the sap started to run. And boy oh boy has it wanted to run! The boiling crew is ecstatic. The sugar content of the sap is very good (2.35%) and is running in faster than they can boil it. The maple syrup they’re making is almost light enough to be fancy and the flavor is out of this world!!!

The weather for the next few days looks good.
Spring is here. Or at least it is right around the corner.
